Ramen Bar

Ramen Bar 6

Ramen - is a Japanese noodle dish that originated in China. It is served in a meat- or fish-based broth, often flavored with soy sauce or miso, and uses toppings such as sliced pork, dried seaweed, kamaboko, green onions and corn. (Wikipedia)

Here at Ramen Bar, they take their noodles seriously to the point the make it themselves from flour imported from Japan. A number of their ingredients are imported from Japan following the specification of Chef Masa Ishikawa. Even their kitchen is based on ramen restaurants in Japan including this contraption to cook the noodles.

They served tonkotsu (pork bones) soup, which they cook and simmer for 20 hours, infused with soy, salt and miso.

I love the color scheme of the place with predominantly red infused with black and cream colors giving it a minimalist zen like atmosphere.

Lauren ordered her usual Shoyu Ramen (1st pic - P280), soy infused tonkutsu ramen topped with tamago(egg marinated for 48 hours), negi (onion), naruto(fish cake) and chashyu (sliced pork). She seemed to like it although did not finish it.

Sapporo Miso Ramen - P320
I ordered a Sapporo Miso Ramen to share with Irene, since we were still full from the popcorn we had with our movie. The difference between this one and the Shoyu ramen, is basically the miso infusion and the added corn and butter topping. I love the chewiness of the ramen, you can taste that it is not of the commercial kind used in many other Japanese restaurants. This was the first time I've had tonkutsu based ramen, and I found it a little too overpowering. The soup itself was very good but that drowned out the creaminess of the butter.  I also found their chasyu to be so much softer than Ukokkei's.

Kakuni Buns - P180
I also ordered Kakuni Buns, melt in your mouth pork belly wrapped in a special white bun. I really loved this order more than the ramen. (weird). I loved the way the pork really falls apart without chewing. Add to that the Japanese mayo topping giving it a contrasting sweetish flavor. This is a definite repeat order for me.

So drop by and check this place out in oh so convenient Eastwood Mall. I'd like to go back and try this one.
