I was actually surprised when we got there that there was an air conditioned area, a new addition as stated in one of their tarps. Good, since Lauren was with us and air conditioning is a deal breaker for her, understandable though in our weather.
I had initially ordered soda but changed it to Sago't Gulaman (P35) when I heard Irene ordering it. This one was quite good but there was a few rough pieces which we guessed was undissolved sugar since the ones we ordered were the last stock they had.
Our startes were composed of Ensaladang Talong at Bagoong (P45), Gambas (P168) and Chicharon Bulaklak (P82). I missed tasting the ensalada but I liked their unique rendition of the gambas, with a fried egg on top, and it was not spicy. The chicharon bulaklak was crunchy but I still like R.Lapids version with their spicy salt (cholesterol alert!)
Lauren and I both had the Pecho/breast meal (P99). My tastes for inasal has been heightened owing to my recent Bacolod trip, having had excellent inasal at Manokan Country. Inasal Republic's version was very good, with more of a vinegar taste. This is a nice alternative to my favorite inasal place, JT's Manukan.
Another favorite was the Sizzling Boneless Bangus (P167), very flavorful meat since I dislike having dipping sauces. The edges were crispy while the prized belly was soft and smooth.
The liempo was quite good, with minimal fatty parts. The meat was soft and had nice charring of the fatty parts. This was tasty and a hit with almost everyone but still a notch lower than my all time favorite, Manang's from Ateneo.
Pancit Canton (P90). I have this obsession with the Filipino style pancit canton, that I have ordered it almost every time I see it on the menu. I've even ordered it in Discovery Shores Boracay also. The serving size was quite generous, with lots of meat and veggies. The problem we found was it was a little too salty for us, maybe the cook slipped with putting soy sauce or salt during cooking.
Buko Pandan (P45). A nice sweet end to was away the savory taste in the mouth. It was creamy with lots of buko pandan jelly and some nata de coco and coconut meat strips.
Inasal Republic is a surprising value find in the Banawe food area, serving more authentic fare than your usual inasal places and with unlimited rice options as well.

The inasal looks a bit dry, but it's good to know that it actually tastes good. ;)
