Corniche at Diamond Hotel Philippines is decorated in bright red and greens as it hosts La Comida Mexicana together with the Embassy of Mexico. The MExican food festival will run from Sept. 16-20, 2015 only featuring guest Chef Danila Romero assisted by the Corniche team.
Start off with the taco and tortilla live stations where you can make your own or have the chefs whip something up.
Try the multi spiced Chicken mole salad which counts chocolate as one of them.

For something a more unique, head on over to the Japanese sushi station and try the Chicken Tequila Maki and the Fish Taco Maki. The generous amounts of guacamole made the fish taco maki my favorite.
Familiar Mexican dishes like the Chicken Chimichanga, Chicken Fajita and Chicken Quesadilla vie for your attention beside the make your own Beef Burrito station.
Seafood lovers will enjoy the Shrimps in Chipotle sauce as well as the equally good Shrimp Citrus Salad.
I was surprised to see a local ingredient, native chorizo, making its way into the Queso Fundido.
For dessert, try the Arroz con Leche and the Churros con Chocolate. For something a little cooler to the taste buds, I suggest the Pina Colada and Sweet Corn ice creams, both are really good.
La Comida Mexicana is priced at P2,550 nett per person and will be ongoing until Sept. 20, 2015. So if you want to experience the bold and zesty flavors of Mexican cuisine, you should take advantage of the limited time food festival at Corniche.
