I first stumbled upon Carmen’s Best Ice Cream at Ultimate Taste Test VI together with Holly’s Milk. I can never resist ice cream so it was no surprise I went up and tried it, it’s been one of my favorite local artisan ice cream maker ever since. Lauren and my favorite is still their salted caramel, and many people agree with us as this is still their no. flavor.
Paco Magsaysay created Carmen’s Best to use the excess milk production from the farm of his dad, former Sen. Magsaysay, plus he also loved ice cream. We visited the Real Fresh Dairy farm in Laguna a few weeks ago to see what goes on in a dairy farm as well as to get up close to the main ingredient of Carmen’s Best ice cream.
The farm has 264 heads of Holstein-Friesian cattle from which they get fresh milk everyday.
They take each process very seriously and those that are injured are quarantined immediately.
All fresh milk are pasteurized in this chamber before being prepped for delivery to their retailers and Carmen’s Best ice cream factory. Carmen’s Best factory is in the process of being relocated to a technopark in Laguna in preparation for exportation.
My new favorite from Carmen’s best is the Macapuno/coconut sport.
The Real Fresh Dairy Farm produces milk and other dairy products under the Holly’s Brand. You have not tasted milk until you’ve tasted fresh milk and not like those from the tetra packs. They also make gouda cheese and kesong puti that was magical when put on top of a cracker and toasted in an oven.
Now I know what goes into each Carmen’s Best ice cream product, no wonder it’s creamy good.
