Flame Restaurant is the upscale dining outlet at the Discovery Primea in Makati that opened last June 2016. Chef Luis Chikiamco has crafted a menu built around modern European cuisine. The view of Makati and its environs is amazing at the 16th floor with unobstructed views. We dined there during the nighttime so I imagine lunch would be equally nice but different, minus the lights.
Flame is one of the handful of restaurants that utilize the Josper grill in their kitchen, a charcoal fired oven and grill in one.
My two picks for best seats are the ones in front of the open prep areas, either appetizer or dessert stations.
Asian Beef Carpaccio (P390). A classic dish given an Asian infusion of wasabi nuts with a sriracha and soy vinaigrette. There’s a lot of recognizable flavors that would appeal to Asian palates, sweet, spicy and salty with a bit of nuttiness from the nuts and arugula. The thinly sliced beef has lots of smoky flavor from the quick sear in the Josper.
Arroz Margarita (P490). A dish inspired by Michelin starred Chef Ricardo Camarena. This dish infuses the flavors of a margherita pizza into a rice dish. Cherry tomatoes. basil pesto, mozzarella and tomato powder gives the rice lots of fresh flavors that you won’t even miss the meat.
US Angus Rib-Eye (P3600/500 grams), serving good for 2 people. Great char with the unmistakable aroma of charcoal, but perfectly medium rare inside. I usually get my steak done medium but this is good also. No need for complicated sauces, just some salt and pepper and let the beef flavor reign.
US Duroc Pork Chop (P1600/400 grams). The meat was tasty but a bit on the dry side for me, maybe because there was not enough fat.
For people avoiding meat, they do seafood real well also. Spice Roasted Prawns (P990) and Roasted Scottish Salmon (P1400) are both are well cooked, you won’t regret either choice.
My favorite of the desserts was the Lemon Tart (P320), served with honey lavender ice cream. The tangy dessert was the perfect way to wash away the strong meat flavors of the mains. The bonus was the lavender ice cream, a flavor I love but many people dislike.
I can’t wait to go back and try the much photographed Lobster fried rice and savor it with a great view. Flame Restaurants aims and succeeds at being a mix of fine and casual dining and with the good food and reasonable prices.
