Gino’s Brick Oven Pizza

August 11, 2011 by Richard

I’ve been hearing a lot about Gino’s Brick Oven Pizza from Spanky Enriquez, who could not stop raving about it. So when I spotted a coupon being offered on CashCashPinoy that cost P325 for P500 worth of food, I pounced on it.

It was quite hard to find Gino’s, since it was located on the 2nd floor of a building, good thing I knew it was beside Cello’s Doughnuts, so I knew we were int he right place when we spotted the sign outside.

One thing I immediately noticed is the the place was quite warm, no air conditioning, only a few fans to fight the heat. We visited there during dinnertime so I can’t imagine how hot it would being during lunch. (*Edit – I’ve since found out that they have already fixed the air conditioning) The place is sparsely decorated, a counter offering a peek at their stone oven dominates a side of the store. Dark wooden tables and chairs adds to the rustic charms of its predominantly red and brown motif.

We asked the server to recommend their best seller and was led to order the  Bianca Verde (P335), composed of arugula, basil, kesong puti, parmesan and ricotta. This is one of the best pizzas I’ve ever had, slightly uneven, thin on the inside and thicker on the outside. There’s really no traditional crust, just a thicker piece of their chewy, flavorful dough.

We had a pitcher of their House Iced Tea (P120) to go with our pizza. The cold iced tea was a respite from the warm surrounding. The drink was not too sweet and had a calamasi flavor added.

I later found out later from a photo book they have, that they grow their own basil and arugula, make their own charcoal and kesong puti. They really do “make their own” pizzas.

I really hope they do something about the temperature as this is the only thing giving me pause.

    MrsLavendula,
We were thinking about that also. Don’t know if it was broken that day or they really don’t have it.

That’s interesting place, but I hope they install aircon soonest :D

I am starting to love kesong puti, :) So I might try that Bianca Verde.

Are pizzas baked from oven brick oven taste better than those baked from traditional oven? That might soon be a trend in food business.

I’d easily go back if I’m sure the place has cool air conditioning, the pizzas are very good and fresh tasting.

I like the idea of growing their own greens for the pizza. We do that also for some of the recipes we make at home: Basil for pretty much a variety of things, tarragon mostly for tea, oregano for sauces, and mints (most especially mints) for mojitos :D !

I gotta try this soon, but hopefully then there is air conditioning. With the coming summer, the heat may be unbearable.

      Ray,
Don’t worry, I’ve got it on good authority that their air conditioning is working perfectly. So don’t let that stop you.
