Sage Tapas Bar is one half of the new two level bar and restaurant that replaces both Conways and Red at Makati Shangri-la. We tried our their new cocktails and tapas menu amidst wonderful live entertainment with the KTG people.
Sage Tapas Bar created 7 new, a mix of interesting cocktails placed in varying vessels. My favorite was the Waikiki Punch served in a large ceramic Tiki glass with tropical sweetness of pineapple and rum. Irene liked the Gin Basil Smash, a bit similar to a mojito.
Pair their drinks with the tapas, created by Chef de Cuisine Gilles Galli. The Dolma (P280) was first to arrive on our tables. Pork and beef stuffed vegetables on top of tomato relish.
Fried Vegetable Wontons with Sambal Sauce (P200). The crispy textures hides the fact that it’s not meat that your are eating, especially with a dip in the spicy sambal sauce.
Saffron Brioche (P260). Three soft brioche buns with smoked salmon and cream cheese filling. You can never go wrong with salmon and cream cheese.
Beetroot Gazpacho Shot (P180). A cold soup served in an interesting container with a piece of lime and feta crostini on top. This was not something I enjoyed, it tasted too healthy and grassy for my taste buds.
Grilled Polenta (P180). A creamy piece of cornmeal with smoky flavors with a sweet bell pepper confit to balance it out. Really enjoyable and quite filling.
Red Mullet Tartine (P320). A pan fried piece of red mullet on top of a toast smeared with olive tapenade with basil puree.
Crab Brandade (P300). These are basically croquettes filled with crab meat, creamy with generous amounts of crab meat.
Sage Tapas Bar serves good food and creative drinks with nightly entertainment by celebrity DJs and rockin’ bands. So if you are looking for a nice chill out place after work then you might want to give Sage Tapas Bar a try.
