Hyatt City of Dreams Szechuan Food Festival Chefs

The Cafe at Hyatt City of Dreams has brought in two chefs from Hyatt Regency Chongqing to bring the aroma and flavors of Szechuan cuisine for their 2 week food festival from August 24 to September 6, 2015. Chef’s Zhang Xiangyang and Chef Wu Tiantan will prepare a host of traditional Szechuan dishes that will be added to their current Asian selections.

You can start off the culinary adventure with a visit to their cold seafood and charcuterie area.

Move over to their Japanese spread with some of the best salmon sashimi around plus interesting sushi roll options. For the seafood averse, the Mango Chirashi would be perfect.

Start your Szechuan culinary journey with these marinated Beef Tongue  and Tripe.

Follow that with a bowl of Szechuan noodles with Beef and Fish Cake. There’s a fair bit of spice but the flavors were not drowned out.

My three favorites were the Wok Fried Pork Belly with Leeks and Chili sauce, Wok Fried Sweet and Sour Prawns (Gong Bao style) and the Stir Fried Beans. All three dishes had great flavor and the spice levels were manageable unless you inadvertently eat a chili.  The chefs have been asked to tone the spice levels to 70% of the original levels in China.

The Crispy Chicken with Numbing Peppers, Chilies and Peanuts qualifies for the scariest Szechuan dish I tried that day. The name alone should have your taste buds quaking in fear. I summoned all my courage to try a piece of the chicken and skipped the surrounding sea of chilies. The chicken was tasty and the texture was nice with the spice kicking in in the end because of the marination.

Temper your taste buds with a visit to the dimsum area, which I somehow missed on my last visit. I recommend the spareribs and siew mai.

Some of the new things I noticed this time around was the availability of Gluten free pasta and pizza plus a whole wheel of fresh Parmegiano Reggiano.

These three jars of infused water are a refreshing addition to the buffet spread. I love the orange/lemon/basil one.

Hyatt City of Dreams Choclate Truffles

Be sure to save room for dessert. They have a great selection of chocolate truffles, bars, and discs. There’s also a plate of Matcha truffles that will make matcha lovers drool. There’s cakes, halo halo stations, soft serve ice cream and other sweet surprises.

      and they already toned down the spiciness, still so spicy for me.
