Spectrum at the Fairmont Makati is one of the most underrated hotel buffets for me. They have a good number of live stations with quality food in each one set amidst a . I recently visited Spectrum again to try their Buon Apetito Fridays, a culinary adventure of Italian cuisine.
That quirky light still dominates the entrance to Spectrum, until know I can’t what to make of it except that its a showstopper of a design piece.
I love this little window as you enter Spectrum where you can spy on the pastry chefs whipping up their magical creations.
The thing I remember most about Spectrum was the fresh honey complete with live bees display. I was surprised that they’ve given it a permanent wooden display case.
Right across the honey station was the start of the night, the Risotto station. Freshly made risotto with your choice of ingredients and finished off in the middle of the giant round of cheese. Tell me how you can resist passing by that station and not having a plate or two or three.
I headed for the cold seafood selection, with salmon, shrimps and mussels.
I was looking for that suckling pig maki but they were not serving it anymore but the other sushi rolls were still excellent replacements especial the Salmon Belly maki. I forgot to take a picture of some of the best salmon sashimi I’ve had in a while, so good it had me reminiscing about Canada.
If bread is your fancy, Spectrum has some beautiful selections tucked between the risotto station and the carvings.
A sea of polenta, grilled, baked and wet surrounded by steamed sweet corn and baked potatoes. I highly recommend the wet polenta, so creamy and packed with flavor.
Italy means pasta so they have a whole range of choices at the Pasta station, just choose your fresh pasta and pair with some white or tomato based sauce and enjoy the al dente bite. Pizzas are also freshly made in their wood fired brick oven with your choice of their pre-made combinations of request your own mad creation.
If meat is your pleasure then the porchetta, roast rib eye and herb roasted lamb should keep you full and satiated.
On to the dessert stations which I feel is one of Spectrum’s strengths.
I love ice cream so I found their display irresistible. I asked one of the chefs for the recommendations and she gave me the a scoop of Raspberry White Chocolate and a scoop of English Toffee. I loved the raspberry so much I had seconds, the English toffee was also good but a little too sweet for me.
For chocolate lovers, they’ve got a whole slew of choices that will make their little hearts flutter with anticipation. Chocolate barks, cakes, truffles and even cannoli. The chocolate cannoli is a beauty, crispy outer layer followed by a creamy filling that had just the right amount of sweetness.
Dainty cakes,tarts, cheesecakes in bright and beautiful colors adorn one side of the dessert station.
The final part of the dessert station contains the chilled selection including this glass of taho/soy bean pudding with tapioca.
It’s been a while since I’ve been back at Spectrum and I have to say the quality of food has become even better.
Friday is the perfect time to hide away from the gridlock and go on a journey with your tummy to Italy at the Buono Apetito buffet in Spectrum for P2,450 net per person.

Wow. They have a nice selection of ice cream with very unique flavors. But wait, isn’t it gelato–or really ice cream? The chocolate cannoli also looked great! I have my eyes totally on desserts. :)
I’m pretty sure that was ice cream.
