Kettle has been around a few years so Chef Chiloy Santos felt it was time to give it a fresh batch of dishes. We visited their newest branch in the 4th floor of Newport Mall in Resort’s World Manila to do a sneak taste of the seven new dishes. Available at all Kettle branches starting Sept. 15, 2016.

Shrimp Tostada (P229). A deep fried tortilla topped with chopped shrimp, salsa, cilantro and red pepper coulis. Squeeze a bit of the lemon to heighten the shrimps inherent sweetness and munch away. A bit messy because the tortilla crumbles a bit after you bit because of how crispy it is. I’m thinking an alternate way is to eat it with your fork and spoon by mashing everything up like a crisp salad.

We were not able to try the Tomato Parmesan Soup with Grilled Cheese Croutons (P299) but from the name alone it should be good. We’ll definitely check it out on our next visit to Kettle.

Cheese-steak Roll (P339). One order of the sandwich comes with their delectable sweet potato fries. The buttered roll is soft and is the same one they use for the Shrimp Po’Boy. It holds sliced ribeye, Provolone cheese and sliced banana peppers. This is inspired and not the same as an authentic Philly cheesesteak roll.

Pan Fried Halibut (P519). If you are looking for a lighter choice at Kettle then this dish should be perfect for you. A piece of perfectly cooked halibut fillet drizzled with salsa verde on top of chorizzo brown rice and vegetables. Trust me, you won’t even realize you were eating brown rice because it was just too good.

Nori Chicken and Matcha Waffle (P399, extra waffle P169). Both matcha lovers, and fried chicken lovers will thoroughly enjoy this dish. Kettle, already famous for their buttermilk fried chicken, goes to the Orient with the karaage inspired nori chicken. There’s a delectable umami flavor on the skin of the chicken pieces but you can add a little honey for extra sweetness. The waffle is just the right thickness so you get a crunch on the outside and good chewiness inside with a pronounced but not overpowering matcha flavor. Served with a white miso butter on the side.

Steak Frites (P899). Inspired by the his travels to Europe. Chef Chiloy wanted to serve an affordable steak dish in Kettle. USDA flank steak served with shoestring potato fries and Kettle steak butter. The steak is good but what carries the dish is the secret steak butter that you’ll be sopping up with your steak, fries and even order some rice also.

Warm White Chocolate Bread and Butter Pudding (P229). You can see the white chocolate pieces mixed into the pudding but the be sure to corner the top edges because those are the best parts. The ice cream serves to give a temperature contrast while the caramel sauce is there if you need more sweetness.
