Kitchen Tales: Shimeji Mushrooms with Chicken

Here’s a quick and easy recipe for you guys to try out.

Ingredients:

  • 1 pack Brown Shimeji Mushroom, also called Beech mushrooms
  • 1 pack White Shimeji Mushroom
  • 1/2 chicken breast
  • 1 tbsp butter (to taste)
  • 1 tbsp. oil
  • 3 cloves of garlic, diced
  • 1/2 tbsp. sugar
  • 2 tbsp. soy sauce

Procedure

  • Slice chicken breast into strips, put a little salt
  • Clean mushrooms, keep everything except the bottom part
  • Saute garlic in oil and butter
  • Stir-fry chicken breast until cooked
  • Place the mushrooms, soy sauce and sugar in the pan.
  • Add pepper to taste
  • Stir fry for a few minutes until cooked

We actually chanced upon this mushroom at a trade show but have since seen it in a couple of supermarkets. The mushrooms are meaty and has a nice crunch in addition to its nutty flavor when cooked. For a vegetarian dish, you can remove the chicken.
