The Long Bar at Raffles Makati has collaborated with ultra premium tequila maker, Casa Noble, to produce a variety of cocktails available every Thursday. The Long Bar is a replica of the original storied bar in Raffles Singapore that once counted Ernest Hemingway and Somerset Maugham as their regular patrons.
Look up and you’ll see a leftover of the colonial era, automated “punkhawallah” fans on the ceiling despite the whole place being air conditioned. There are beautiful murals on the walls like this one of Charlie Chaplin and there’s also another one of Manny Pacquiao on the other wall.
You’ll get quite a shock if it’s first time to step through the doors of the Long Bar and see peanut shells strewn all over the floor. It’s perfectly acceptable, actually it’s a tradition to throw them as a way of rebelling against the strict anti littering laws in Singapore. So crack open some complimentary peanuts and get used to throwing them all over, trust me it’s liberating fun.
Casa Noble Tequila Thursdays start at 5pm every Thursday and all the ladies get one free shot of Casa Noble Reposado. Order three Casa Noble cocktails and get a free chef’s appetizer of the day.
The mixologists at the Long Bar created 6 drinks using Casa Noble Tequila starting off with the Bandera (P495). A tri colored drink that represents the flag of Mexico, 1 shot each of Casa Noble Crystal, Sangrita and fresh lime juice.
Other drinks on the list are the Loco Crystal (P495), a honey, calamanasi and muddled pineapple drink with Casa Noble Crystal. The Verde Mente (P495) is a particularly interesting drink with ampalaya/bittermelon (yes, ampalaya so it makes it kinda healthy). Two classic drinks give the tequila twist are the Tequila Negroni (P495) and the Black Magic Woman/Tequila Old Fashioned (P495).
The most fetching of the Casa Noble drinks is the Dirty Ramon (P495), swirling pieces of red and green tantalizing the eyes as it catches the light. Casa Noble Crystal with muddled red bell pepper and tarragon, sugar, lemon, Yellow Chartreuse, Aperol and finished off with Ginger ale.
We paired our beautiful drinks with some plates from Long Bar’s Bar Chow menu starting with this Asian Ceviche “Kinilaw” (P480). Salmon and tuna cubes tossed in dalandan and calamansi for the nice citrusy kick as well as cooking the seafood a bit.
The Cheese Croquettes (P255) are perfect for people who want a crunchy and gooey combination. Gruyere cheese coated in bread crumbs and deep fried, served with a chili and coriander mayo.
More crispy and crunchy options to be had like the exciting Pork Rinds (P225) and the yin-yang hued Calamari Moros y Christianos (P330). The pork rinds have an irresistible chili and tamarind rub to compliment the crunchiness that you won’t be able to resist.
My favorite was neither fried nor porky, it was the Baked Chicken Wings (P300). Coated in a stick Singaporean black pepper sauce that will have you licking your fingers in no time.
