Manila’s Signature Dishes 2010 : Barcino Wine Resto Bar

Chef Jaume Villaloñga, corporate chef of Barcino Wine Resto Bar, has put together a wonderful set of dishes as part of Manila’s Signature Dishes 2010. Barcino currently has three branches around the metro with two more opening up soon. All the dishes are part of the Spanish cuisine from the Catalunya region, Chef Jaume just adds his own personal touch to them.

  • Barcino is latin for Barcelona, which is the capital and most populous city in the Autonomous Community of Catalonia and the second largest city in Spain
Ensalada Catalana, one of their bestsellers, was the perfect starter for a great meal. A salad of crunchy mixed greens, bell peppers, tomatoes, eggs, and Spanish chorizo (sausage) drizzled with a mildy sweet tangy dressing. I liked the nice surprise from finding the slices of chorizo hidden amongst the greens. It added a nice meaty touch to the salad.

Paella Vallenciana served as the set’s main course, its quite a large serving and can easily fill up two people.The rice was perfectly done, with a little bite in the middle (al dente) and was very flavorful especially with the squeeze of the lemon. The seafood topping was generous although it was missing the charred bottom many people seem to like but I’m not really a fan of that. I think that can be specified to the server when you order it. It’s easily one of the best paellas I’ve had in Manila.

For dessert, Crema Catalana, a custard dessert reminiscent of the french creme brulee but with the added lemon and cinnamon. I love custard desserts as my wife can attest to, from leche flan to creme brulee and anything in between, if I see it I’ll most probably order it. You’d be surprised to know I don’t really like the caramelized sugar on top, as I find it sticks to my teeth. Barcino’s version had a very rich custard that just felt great to my taste buds and served a great wrap up to an excellent meal.

So I encourage you to go check out Barcino and try this wonderful set Chef Jaume has put together as well as try out their other Spanish fare.
