Manila’s Signature Dishes 2010 : Metro Cuisines

   Metro Cuisines is a small resto located in NS Amoranto (for. Retiro), recently opened last September and headed by owner Marco Tan and Chef Archie.

Cream of Pumpkin was the first thing served to us. This was their soup of the day so what you might have might be different. This was the basic pumpkin cream soup, not too interesting, but served with a dollop of extra cream.

Mushroom Aioli with French Toast. Irene would love this dish as she always orders garlic mushrooms when she can, sometimes even making it at home. I like the inclusion of a lemon wedge to the dish as it adds a nice tart taste to lessen the oiliness. The mushrooms were very cruchy and the dish had lots of garlic bits.

Baked Herb Salmon Set. The set consists of a generous portion of baked salmon laid on top of white rice with a siding of salad and extra salsa sauce. This dish was originally the recipe of Marco’s grandmother but when she passed away, the recipe was lost. It has since been recreated by Chef Archie thru trial and error to achieve the same taste as the original recipe.  I’m a big fan of salmon, its my favorite fish, and this one was no different. The crunchy texture is a nice touch to balance out the soft salmon meat. The different herbs served to highlight the salmon taste that I love but Irene dislikes instead of masking it.

Panna Cotta. Metro Cuisines’ version of panna cotta is a layer of plain panna cotta topped with chocolate and a layer of chocolate panna cotta. Although I’m not really a chocolate lover as most of you may know, this was very mild chocolate for me, so I ended up finishing everything. I’m really a sucker for custard like desserts.
