The Cafe at Hyatt City of Dreams Manila started May off with a meaty bang. Chef Jay McCarthy is back for Maytime Mains, highlighting the splendor of US meats. The food festival is happening from May 2-7, 2017 only for both lunch and dinner service. Lunch buffet starts at P1588 nett and dinner is P1,988 nett.
Chef Jay was in Manila last 2015 and was cooking a storm of beef dishes, this time around he has brought pork and lamb also for a more variety.
Be sure to try the Beef Gravlax, a preparation usually used for salmon. Chef Jay marinated these tender, smoky slices in bourbon for a hint of sweetness. It’s located at the back of the sushi station, don’t forget to drizzle it with his own red chimichurri sauce. The red chimichurri is a creation of Chef Jay where he uses a classic chimichurri base but adds roasted red peppers and thyme then purees it for a smooth texture.
Chef Jay has prepared 4 select dishes that will be available for both lunch and dinner services.
Hickory Smoked Beef Brisket with BBQ Sauce. The brisket was smoky and tender and paired really well with the excellent bbq sauce.
Grilled Roasted Pork Shoulder. Sufficiently fatty to keep the meat tender while imparting lots of flavor. The roasting seals all the juices in while the grilled finish gives it a beautiful sear.
Grilled Rosemary and Jalapeno Lamb Chops. This was my first time to try American lamb and it was delicious. American lamb is raised in high altitudes and graze on different grass resulting in a hardier animal with a gamier lamb taste. It’s the gamier lamb taste that I love over the more common New Zealand lamb we get in may places. The lamb chops are perfect with the creamy and spicy red chimichurri sauce.
Roasted Mustard and Pepper US Tomahawk. This is the centerpiece of the food festival. You can request for a slice of the meat or a bone or two and they’ll cook it your preferred doneness. I suggest a very quickly then eat with a bit of salt, perfect way to let the beef shine.
I was also surprised by the eye catching new churrasco grill in the Grill and Griddle area. You can see different cuts of meat slowly roasting and each one is paired with a special sauce.
You can also see chefs expertly grilling the lamb and pork cuts. I’m betting no one can resist the smoke and aroma emanating from this area.
Finsih off your meat laden meal with some sweet deserts like chocolate macarons and apple crumble.
