Philippine Culinary Heritage Food Festival at Corniche

Corniche at Diamond Hotel Philippines is holding a Filipino food fest based on our rich culinary heritage. Chef Christopher Carangian, Punong Heneral of the Culinary Generals of the Philippines, guides diners thru the origins of Filipino cuisine by way of specially prepared dishes. The food festival runs from June 19 to 30, 2019 and is priced at P2,990 nett per person. Guests who spend a minimum of P5,000 will get a raffle ticket for a chance to win a 2 night stay in Baguio.

The Nilitson na Baboy ni Pigafetta is a crowd-pleaser with the crisp skin and flavor packed meat from a native black pig.

The Barakong Bibe is a native duck marinated in barako coffee before being deep fried for a deep and tasty meat.

Mutya ng Cavite, a funnily name soup, is a creamy chowder with seafood from the coastal town of Cavite like flower crabs, mussels, shrimps, and clams. The broth is so sweet with flavors of the sea imparted by the clams and mussels.

Warik Warik is liempo and choice offal are cooked to a satisfying crisp with ginger and aromatics with liver spread for extra creaminess. Prepare to eat more rice that you planned.

Adobong Dilaw ni Aguinaldo. Chicken adobo cooked with turmeric for the golden hue, served by Maria Agoncillo, Gen. Emilio Aguinaldo’s second wife. This is another dish I enjoyed very much and went so well with rice as most adobo dishes do.  

Ciento Quinse is an extinct dish discovered by Chef Christopher at a wake of all places. A Chavacano dish that uses a mix of seafood, jackfruit, coconut cream and 115 chilis that was previously served in the jackfruit husk after cooking.   

Steamed Chicken ni Meong. This is another of Gen. Emilio Aguinaldo’s favorite light dish to satisfy his weak stomach.

Adobong Pusit Rice. The flavors of the sea permeates this special rice dish, minus the black teeth stain one usually gets.

Be sure to visit their grill station where you can select from choice meats and seafood and have them cooked to your preference, I suggest butter garlic for the seafood and just simple grilling for the meats.
