On our last night in Davao, we had dinner in my brother in law’s house with a a couple of friends. The highlight of the menu is Lechon from our current favorite, Porky’s Lechon.
Since moving to Manila, we are finding it elusive to see the mighty flavorful lechon in the parties we’ve attended. In Davao, almost every party features a wonderful roasted pig stuffed with garlic, salt and spices that makes my mouth water thinking about it.
Each other of lechon from Porky’s comes with their excellent dinuguaan, according to my wife and friends. I stay away from that and stick with meat itself. My favorite parts are the stomach, ribs and the skin from the bottom.
We had corn and rice for sidings. The corn is from Kaugnay, recently harvested from their farms. Corn cobs that have never been refrigerated taste so much sweeter.
What remains of the lechon after 6 adults and 3 kids get through with it.
