Providore in SM Aura

Providore in SM Aura is the newest addition to the Raintree Restaurant Group. This is their homage to the past, uncomplicated food cooked the way it was in the past. There is no set cuisine featured in their menu but everyone will find something they like.

Taking a look at the menu and the feel of the place reminds me of country club dining and even more so as they just opened the veranda area. I feel this is the evolution of Mr. Jones (closed in 2014), a maturation in feel and food.

There’s even fully stocked shelves by the entrance filled with local purveyors of a wide range of products you can bring home.

Zucchini Pecorino Fries (P175). These may look like french fries from afar but a closer look will reveal that underneath golden brown breading are zucchini spears peaking out. Malagos pecorino cheese is shaved on top with buttermilk ranch dressing and fresh lemon wedge on the side. You’ll get a satisfying crunch when you bite into one of these and it’s a good way to enjoy an underappreciated vegetable in a tasty way.

Negros Burrata Cheese (P595). A ball of burrata from Negros based Casa Del Formaggio sits atop sliced tomatoes, fresh basil, basil infused olive oil and balsamic vinegar. This a very good and creamy starter with a balance of flavors. I found it a bit expensive considering the smaller burrata compared to my usual order at Gino’s.

Providore Salad (P350). Market greens with avocados, bacon, bleu cheese, cranberries, walnuts and arugula with buttermilk ranch dressing. You can’t go wrong with avocados and bacon plus ranch dressing added to fresh crisp greens, one salad I can happily eat.

Wash down your food with some pretty and refreshing drinks like the Calamansi Lychee Cooler (P120) and Providore Punch (P175). Lychees are one of my favorite fruits so add a little zesty calamansi and I’m sold, it’s lightly sweet and super refreshing. The providore punch is a pineapple, watermelon and passion fruit punch topped with cherry syrup plus a kitschy drink umbrella.

Crispy Seafood Mayo Roll (P375). Two toasted brioche rolls hold seafood tossed in remoulade. Potato chips and a pickle are served on the side. I found this one underwhelming with the sauce overpowering the chopped seafood but the potato chips were excellent.

Winner Winner Chicken Dinner (P320). I’ve always been enamored with saying this phrase ever since I heard it in a movie. 3 pieces of fried chicken with crispy skin and juicy, flavorful meat served with corn, beans, and mashed potato plus a bacon cheddar biscuit on the side. Kids and adults will enjoy this a lot.

The “You’re Gonna Need Extra Rice” BBQ Plate (P320). Funny name but kick ass in taste, a large stick each of pork and chicken bbq, expertly grilled. Served with a large cup of java rice and extra bbq sauce to smother on top of your rice and extra rice.

Look at the cute details on the metal bbq rod they use, waitstaff will offer to de stick both in case you don’t want to wrestle with it. The bbq is sweet and salty and will have you nostagic of the good ol’ days of simple, uncomplicated times.

The Turkey Plate. It’s Thanksgiving on a plate minus all the renuion and cleanup. Slice turkey and ham, stuffing, greens, cranberry and gravy plus pumpkin pie. I’m not sure if this is always available but it can’t hurt to ask and order it pronto.

Steel Plate Cooked Garlic Butter Salpicao Steak (P395). US beef slices cooked in olive oil with chili, garlic and onions. For an extra dose of indulgence, they topped it with a large piece of butter which had already melted into the mixture. I guarantee you’ll be raising your hand to order a bowl of steaming hot plain rice to go with this.

Macaroni Pimiento Four Cheese Gratin (P395). Adult style mac and cheese that’s served sizzling hot that you’ll be transfixed at the bubbling cheese.

Fresh Lumpia (P195). A humongous piece of fresh lumpia topped with panocha sauce, sesame peanut sugar and garlic water. This is another nostalgic dish that’s executed well with the taste that you will want to come back for. Irene and I both loved this one.

For dessert you can try the milky Coconut Cream Tres Leches (P295), Housemade Apple Pie Ala mode (P250) and Pecan Tarts. You can also check their pastry counter display for available choices.

Providore is a great restaurant addition to SM Aura, simple, easy to understand food with generous servings at reasonable prices.
