SM By The Bay Welcomes Madrid Fusion Manila 2016

SM by The Bay welcomed delegates and guest chefs to the Welcome Night for Madrid Fusion Manila 2016 last April 7, 2016. A cool breeze, music, overflowing food and merry making as guests, delegates and chefs socialized in a relaxed setting. The 2nd Madrid Fusion Manila was held from April 7 to 9, 2016 at the SMX Convention Center in SM Mall of Asia.

I chanced upon Asia’s Best female chef Margarita Fores dancing with other guests, a fun sight.

There was a lot of food in different stations from Vikings, C by Cunanan, Mila’s Lechon, Elar’s Lechon, Kai.

Lots of fun but my favorite for the night was the Aklan Oyster with Bicol Uni and Ebiko and Ponzo Ceviche. A starter filled with bursting flavors of the sea. I think I had at least 3 of these.

The Pako and Shrimp Salad is also a nice way to get the taste buds going.

Madrid Fusion Manila Roasted Beef Belly Taco

The Beef Belly Taco was tender with the scallion kimchee and vinegared red onion providing a contrasting acidity and flavor plus corn to round out the taco with some crisp sweetness.

Madrid Fusion Manila Seared Tuna on Crisp Tortilla

Another favorite of mines was the Seared Tuna on Crisp Tortilla with arugula, caramelized onions and balsamic syrup. So much complementary flavors and textures and it’s so easy to just pop one after another into your mouth.

Want some sticky stuff, the Assorted Yakitori sticks and the Honey Nut Prawn was good choices.

To get guests going, free flowing San Miguel Beer, Don Papa Rum and Tanduay rum was served.

What’s a party with out some lechon. They had a trio of choices, stuffed from Vikings, freshly roasted from Mila’s and big and crispy from Elar’s.

Still have space in your tummy, get some Guagua Longganisa Rice to fill it up.

Madrid Fusion Manila Guest Chefs

I had fun spotting the chefs that were introduced one by one although some just dropped by earlier like Chef Joan Roca of  El Cellar de Can Roca. He and some other chefs had to leave early because of the dinners they were doing in venues across Metro Manila. The most animated of them all was Chef Kevin Cherkas of Cuca in Bali, Indonesia. Other chefs in attendance were Leah Cohen of Pig and Khao, Yoshihiro Narisawa of Narisawa, Virgilio Martinez of Central, Fernando Arellano of Zarana and Oscar Calleja of Annua.
