Spectrum at Fairmont Makati has been one of our favorite buffets in the city. I’ve raved countless times about their sushi and sashimi selections as well as their inventive and fun filled dessert spread. This time around Spectrum goes under the sea to give you the Seafood Sunday Brunch, price at P2,777 net per person and will be available every week until the end of August.

My first stop had at Spectrum has always been a trip to the sushi and sashimi section but this time around, I got sidetracked by the starfish and catfish shaped pates. They were so nicely made it seemed like a waste to get some.

The smoked salmon and marinated scallops were both so good, I got double servings of both.

By the time I reached the bountiful sushi and sashimi area, I had 2 plates full of seafood appetizers but I could never resist filling my plate with the sushi rolls, nigiri sushi and salmon sashimi.

One last plate of appetizers for the cold seafood, fresh oysters and elephant clams filled my plate, as well as lemon wedges to squeeze them with.

On to the main courses which of course were dominated by seafood save for a few dishes with meat. Get some fish, crabs or prawns and have them grilled or cooked the way you like or just get some from the slabs.

The also had a bunch of baked oysters for those squeamish about raw oysters but I’ll take raw over baked any day.

They had a number of tempura dishes aside from the usual shrimp so crispy cravings were well taken care of.

While looking for this week’s dimsum selection I stumbled on the steamed fish in a basket that I thought contained asado buns.

On to dessert, with the seafood theme taken to new heights by Spectrum’s talented pastry team. Seashell shaped chocolates, crab fat and sea salt macarons and starfish topped cake pops as well as numerous other dessert choices. Lauren and I loved the sea salt macaron shaped like a blue and white seashell but I found the crab fat pretty but weird tasting.

There was also an interesting train for fruit sushi, unique but I would never trade it for the real thing.
