Celebrate Spring at Brotzeit with White Asparagus

Springtime in Germany is a time for celebration, as the leaves turn green after months of winter. Brotzeit flies in fresh white asparagus every other day from Germany to maintain freshness.

This was my first time to try white asparagus so I did not know what to expect. White asparagus are raised in the dark or under cover to prevent them from turning green and are hand plucked during harvest.

Spargelsuppe/White Asparagus Cream Soup (P290/cup, P490/bowl). Thick cream soup with sliced white asparagus and smoked ham. There’s a good balance of creaminess, smokiness and sweetness.

Spargelsalat/ White Asparagus Salad (P550). Fresh greens with white asparagus , mandarin oranges, dried blueberries, walnuts and pine nuts in a white balsamic dressing. A good introduction to white asparagus as it’s mixed in with lots of other flavors.

Spargelplate/White Asparagus Platter (P2900/whole, P1650/half). You’ll need a few people to tackle this overflowing platter featuring 400grams of white asparagus. The platter also comes with smoked salmon, black forest ham, smoked ham, poached eggs and parsley potatoes. I suggest requesting for more hollandaise sauce because the white asparagus tastes so much better with the indulgent sauce. The white asparagus are much meatier and sweeter than their green counterparts with a slight bitter flavor.

They also have main dishes that come with white asparagus like the Grilled Beef Tenderloin (P1300) and Pan-seared Lapu Lapu (P1050).

Der Spargel Klassiker/ Classic White Asparagus (P1400/whole, P850/half). If your goal is to enjoy the springtime favorite, the this is your plate. 250 grams of lightly poached white asparagus and potatoes with a choice of Hollandaise or brown butter sauces. You can also add black forest ham, smoked ham, poached eggs or smoked salmon for P100 each.

Deconstructed Lemon Cheese Tart (P290). Lemon cheese tart with white asparagus ribbons and dried red berries. A very tarty dessert with white asparagus playing the part of texture rather than flavor.

The white asparagus festival menu is available until June 24, 2019 only so be sure to visit any Brotzeit branch to sample these special dishes.
