Makati Shangri-la joins the Sustainable Seafood Week that runs from Feb. 15 to Feb. 20, 2106, a program that aims to focus on ethically sourced local ingredients. This program is an extension of the Rooted in Nature philosophy of the Shangri-la hotel group. The program will help educate fishermen on how to catch and preserve marine life using ethical techniques. I remember seeing restaurants in Davao serving finger length rock lobster and thinking how they will grow to a substantial size when they’ll all been caught already. I’m glad Meliomar Philippines and their partners are helping push this all over the Philippines.
Sage Bespoke Grill will be offering a 3 course lunch for P980++ and a 5 course dinner for P1980++ in conjunction with the event.
Here are some interesting appetizers using fresh local seafood which includes a Sisig made using Matambaka (Purse Eyed Scad) that will have you yearning for plates of garlic rice. Lauren loves matambaka, and would it eat it fried as a whole. I would never imagine it being used in such a unique way.
Lunch started with a Parrotfish Ceviche Leche de Tigre, Peruvian style. Coconut milk, lime, chili, onions and salt and pepper flavor this delicious starter. The flavors are similar to the ceviche I had from Cocina Peruvia, creamy with a light citrus flavor and mild spiciness. Interesting serving container, keeping the ceviche cool without diluting it.
Tomato and Oregano Algario Gazpacho with baby squid ala placha. Tangy cold soup with small pieces of tender squid.
Main course was a Josper Grill White Snapper, with chorizo, Manila clams and tomatoes. Nicely crusted snapper meat with a bite, chorizo and clams provide burst of sweet and salty flavors. The foam on top is a nice touch, evoking images of the waves coming on to the beach.
Caramelized Pineapple Crumble with star anise and vanilla cream. A dollop of vanilla cream sauce and a vanilla pod adorned this wonderful end to a delicious and worthwhile meal. The crumble is the clear winner in this ramekin, simple but packs so much texture and flavor. Be sure to scoop out until the bottom so you’ll get everything in one spoonful.
Circles Event Cafe will be featuring different local fishes in exciting dishes like Flying fish, Talakitok and Skipjack tuna. The flying fish was the most interesting to me, all the while I thought it was just a great thing to spot when out at sea little did I know it was edible.
