When one mentions food at Discovery Primea, more often than not, talk will center on Flame, their excellent restaurant with a killer view. Restaurant Tapenade, their all day dining outlet is one of the most underrated restaurants in Makati. It’s known for their Salad Room, recently enhanced, one of the best deals in town for it’s selection of appetizers and salads. I believe their ala carte service is equally as good especially the new Mediterranean menu created by Chef Luis Chikiamco.
Mozzarella and Friends (P760). Creamy mozzarella balls served with basil pesto, black olive tapenade, romesco and fruit mostarda. The classic pesto is delicious but the romesco pairing was my new discovery.
Prosciutto and Company (P760). This is one dish that goes the extra mile. It’s very rare nowadays to see table side service for dishes unlike decades before when it was the rage. They will wheel out a manual meat slicer and slice it tableside. Served with cantaloupe melon, mangoes and asparagus, my vote goes to the melon for a sweet and salty pairing.
Shrimps En Gabardina (P540). This was a surprisingly good Spanish style tempura served with a Guindilla aioli dip. The batter was crisp and light and went really well with the creamy and slightly spicy dip.
Patatas Crunchy with Mojo Dip (P220). I love potatoes and these were excellent, crispy outer shell with soft and creamy potato slices inside. The potatoes are seasoned with an addicting lemon salt that was so good I did not even use the accompanying dip.
Wagyu Beef and Mushroom Paella (P1500). This paella will grab the attention as wagyu beef is wont but it was nothing special for me.
Roast Chicken and Chorizo Paella (P890). This was my choice for best paella that day, the rice was much much tastier with the generous amounts of chorizo to inject it’s usual umami flavors. The roast chicken was no slouch either with its crisp skin and tender meat.
Rigatoni Al Sugo (P540). The sugo (rich Italian sauce) is made up of Italian guanciale, fennel sausage and smoked bacon in tomato sauce. This is one of the best pasta dishes I’ve had, sauce is very rich and smoky from the generous meats.
Red Snapper Fillet (P790). Don’t be fooled thinking it’s just a light fish dish with the pita bread hidden at the bottom to sop up the spiced tomato broth.

For dessert we sampled three items, Almond and Caramel Bar (P380), Strawberry Creme Brulee Cake (P380) and Chocolate Tart (P420). I liked the strawberry cake, no surprise, as well as crunch from the almond and caramel bar, while I believe chocoholics will enjoy the deep flavors of the chocolate tart.
