A Taste of Argentina at Sage Bespoke Grill

Makati Shangri-la’s Sage Bespoke Grill welcomes new Chef de cuisine Sebastian Barcudes with a taste of Argentina. The Argentinian chef gives diners a taste of his home country with Bolzico beef steaks.

Chef Sebastian also brought an assortment of knives from Argentina to assist in enjoying the fine steaks. Each one was hefty and slightly different so pick one that catches your eye.

Home made bread and addicting sweet potato crisps started off our journey to Argentina.

Scallop ceviche with citru and spices

Scallop Ceviche. A bright and sweet starter to prepare our taste buds for the meaty main course. The scallops had the perfect thickness to still give it a good bite but thin enough to absorb the citrus and spiced easily.

We had a trio of Bolzico steaks cooked in Sage Bespoke Grill’s signature josper grill.

Vegetable charcoal grilled Bolzico tenderloin

Tenderloin (P1,800++). I’ve eschewed fattier steak cuts now but the treatment of this classic was a big surprise. Chef Sebastian coated the tenderloin in “vegetable charcoal” which sealed the juices and flavor whilst giving the steak a contrasting texture and taste. Vegetable charcoal is carrots, onions, zucchini, and eggplant, grilled to black, ground and seasoned with salt and pepper.

24 hour slow cooked Bolzico oyster blade

Oyster Blade (P1,400++). At first glance, the meat looked dry and tough but it’s been slow cooked for 24 hrs for maintain tenderness while extracting optimum flavor. This had the “beefiest” flavor among the trio we sampled.

Bolzico rib eye steak medium

Rib-eye (P1,900++). This is probably the most popular steak cut nowadays with its abundant marbling. Cooked to a perfect medium to enjoy and highlight the appetizing meat.

Smoked Red Chili, Criolla and Chimichurri Sauces

A trio of sauces, chimichurri, criolla and smoked red chili, was served with the steaks. My favorite was the criolla, an Argentinian salsa made from onions, bell peppers and tomatoes.

Altos del Plata chardonnay and Norton Reserva Malbec

Pair your Bolzico beef steaks with Argentinian wines, the chardonnay was very easy to drink.

Josper Grilled Salmon

Josper grilled salmon for those who don’t eat beef like Irene, perfectly cooked with a juicy center.

Molten Chocolate Cake with Vanilla Ice cream and fruits

Molten Chocolate Cake with Vanilla Ice cream. Gooey dark chocolate with a side of fruits and a lovely quenelle of vanilla ice cream to end our trip to Argentina.
