The Best of Filipino Cuisine at Corniche

Every year Corniche at the Diamond Hotel Manila holds a Filipino food festival to celebrate the myriad flavors of  our cuisine. This year’s festival is entitled “The Best of Filipino Cuisine” brings together three well known Filipino chefs, Sau del Rosario, Bruce Lim and JP Anglo to join Executive Chef Marko Rankel.  Each chef brings their particular regional specialties with some surprises from German Chef Marko. The food festival is will last from May 13-23, 2014 only both for lunch and dinner.

Chef Sau Bagnet Kare Kare

My favorite dish that night was this Bagnet Kare Kare with Truffled Macadamia Sauce made by Chef Sau del Rosario. Thick slabs of pork slathered in a very complex nutty sauce that just screams for rice as most Filipino dishes do. I was quite happy the truffle scent was muted and not overpowering. I had a healthy serving of vegetables to temper the sinful bagnet but of course with more of that macadamia sauce.

Chef Sau also served his signature Sisig with Foie Gras, which I first tried at the Luzviminda buffet.

Best of Filipino Cuisine Chef JP Anglo Lechon Chef JP Anglo Illongo Lechon

Chef JP Anglo proudly represents his province with an Illongo Lechon Baboy. Thin, crackly skin yielding to the tender, flavorful meat and ribs dipped in his pure liver sauce.  He also had a Kurubota Pork Katsu with homemade banana ketchup.

My favorite dish from Chef Bruce Lim was his Fried Pusit with Salted Egg and Cream Sauce. He gives it a twist by using dried squid instead of the fresh ones which has a more intense umami taste and then coats it in the indulgent salted egg and cream sauce.

Chef Marko Corniche Goto

Chef Marko surprises with his own version of Adobo which uses German potatoes, shallots and cream. He also made a make your own Goto which you can top with different ingredients of your choice.

Chef Sau Tibok Tibok

For dessert, I enjoyed the Tibok-Tibok (coconut milk pudding), a popular dessert from Chef Sau’s hometown of Pampanga. He added some langka (jackfruit) and macapuno (coconut sport) strips to give it a little more sweetness.

The Best of Filipino Cuisine food festival at Diamond Hotel’s Corniche will run from May 13 to May 23, 2014 only. Diners also get a chance to win round trip airline tickets for 2 for a minimum spend of P5,000 nett.
